Blueberry Bread Pudding

Super easy bread pudding recipe with a rich, creamy sauce to top it off.

Blueberry Bread Pudding

Ingredients for Pudding:

  • 3 eggs
  • 4 cups heavy whipping cream 
  • 2 cups sugar
  • 3 tsp vanilla extract 
  • 2 cups fresh or frozen blueberries 
  • 1 pkg (10-12 oz) white baking chips 
  • 1 loaf (1 pound) French bread or Blueberry Brea, cut into 1" cubes

Ingredients for Sauce:

  • 1 pkg (10-12 oz) white baking chips 
  • 1 cup heavy whipping cream 

Directions:

  1. In a large bowl, combine the eggs, cream, sugar and vanilla. Stir in blueberries and baking chips. Stir in bread cubes and let the mix stand for 15 minutes until it's soft. 
  2. Transfer to a greased 13x9" baking dish. 
  3. Bake, uncovered for 50-60 minutes at 350 degrees F. Use the clean knife test to check if it's done. 
  4. Let it stand 5 minutes before serving. 
  5. Sauce: Place the baking chips in a small bowl. In a saucepan, bring the cream to almost a boil. Pour over the baking chips and whisk smooth. Pour over each individual serving of the Blueberry Bread Pudding before eating.
