Considered the rarest of all teas, white tea is hand picked from the Camellia Sinensis plant only in the springtime before the leaves have fully matured, the best teas coming from the buds.  Properly steeped in hot, but not boiling, water, white tea will yield a naturally light, sweet flavor.  It is naturally low in caffeine and contain a greater concentration of antioxidants than green tea.
